Pomegranate Tri Tip
Ingredients
- 1 decent sized Tri Tip
- 1/2 cup olive oil
- 1/2 cup soy sauce (low sodium)
- 1/2 cup pomegranate juice (pure pom juice)
- 4-5 cloves garlic
- 1 tbs. fresh ginger, sliced
- freshly ground black pepper to taste
Instructions
In a small bowl combine olive oil, soy sauce, pom juice, garlic, ginger, and black pepper,. Place tri tip in resealable plastic bag. Pour marinade over and refrigerate overnight (or freeze for a rainy day).
Bring tri tip to room temperature. Preheat outdoor grill for high heat. Sear/brown one side of roast for 6-8 minutes, then reduce heat and cook to desired doneness (time depends on thickness of meat, but it should be about 8-12 more minutes). Allow to rest 10 - 20 minutes before slicing.
